I am constantly trying new recipes. But how else do you make cooking fun? Tonight for dinner I tried two new ones. Most of the time they are pretty good but Matt always sighs when I tell him I tried a new recipe and every once in a while the girls won't even try to eat whatever I fixed. Well, tonight at dinner I got the utlimate compliment any mom could get. You know the kind that only come around every once in a while? I tried a new ginger peach light dessert recipe tonight. It was good...perfect for summer. Well, Mesa excitedly said, "Oh Mom! I just can't stop saying mmmmmmm! You are the BEST maker." :) Pretty sweet!

No fair! I get the "what's for dinner?" and before I can even say what it is they say, "...oh, I hate that!" I'll have to share ideas with you!!! Your so clever and creative. I will be praying for Mesa and Kindergarten, I totally understand! Hope you are good. Love ya!

Here is the recipe Jen:
1 gingersnap cookie, crumbled
1/4 ground ginger
1 6oz carton peach yogurt
1/4 cup cream cheese, softened
1/4 teaspoon vanilla extract
1/3 cup sliced peaches, drained and chopped
Combine crumbs and ginger and set aside. In a small mixing bowl, beat yogurt, cream cheese and vanilla until smooth. Fold in peaches. Spoon into two 6 oz custard cups, cover and refrigerate 1 hour. Just before serving, sprinkle with reserved crumb mixture. Makes 2 servings
Of course I doubled the recipe to make 4 servings for my family! Enjoy!
